Roasted Veggie Salad: with Peanut Ginger Lime Dressing


Step 1: In a pan toss chopped yams, onion, red peppers, and broccoli with olive oil, salt, and pepper. Roast (400* oven) until tender.

Step two: In a blender/magic bullet, blend a scoop of PB2, squirt of lime juice, knob of Ginger, Salt and Peper, and a few splashes of olive oil.

Step three: Place roasted veggies on a bed of Spring mix and drizzle with the dressing!
