Pumpkin Loaf

Welcome to Val’s kitchen! 

Today we are making a pumpkin loaf.

Ingredients:

2 cups flour (I like to use 1 whole wheat, 1 all purpose)

½ tsp salt

½ tsp baking powder

1 tsp baking soda

cloves, cinnamon, nutmeg – to taste (1 tsp each approx)

2 cups brown sugar

¾ cup butter (replace with 2-5% plain yogurt for lower fat)

2 eggs

1 can pumpkin or 1 ½ cups fresh pumpkin puree

2 tbsp pumpkin seeds roasted (can substitute walnuts or pecans)

Directions:

Grease a loaf pan

Preheat oven to 350 C

In a small mixing bowl, mix together all dry ingredients

In a large bowl beat sugar and butter (yogurt) until just mixed

Add eggs 1 at a time, beating after each

Add pumpkin puree and mix

Slowly add the dry ingredient mixture beating slowly

Pour mixture into loaf pan

Top with pumpkin seeds (push them gently into top of mixture to avoid them falling off )
